SWEET POTATO BRUSCHETTA
1 cooked sweet potato (don't cook to much, we are not going to mash it)
1 red onion
1 garlic clove
Cut the potatoes into slices.
Distribute the slices in a nonstick baking dish and bake for 20 min.
With the potatoes still hot, rub the garlic clove on one side of each slice.
Put some onions, tomatoes on top of each slice, decorate with basil, put a few drops of olive oil on the top, and serve.
