Spinach Quinoa Muffin

These savoury muffins are ideal to have on the go.  Include it in your weekly meal prep, and enjoy!

Ingredients
1 cup cooked quinoa
½ cup of light grated Parmesan cheese
1 cup of spinach
1 whole egg
Salt and pepper to taste

Method of preparation
Preheat the oven to 180ºC.
Rip the leaves of spinach with your hands.
Combine them in a bowl with quinoa, cheese and egg.
Season with salt and pepper to taste and stir well.
Distribute the dough in a non-stick muffin tin.
Bake for 15 minutes or until golden brown.
