Zucchini "Meatballs"

Great light option for lunch or dinner. The following recipe yields nine meatballs, with 84 calories each!

Ingredients
2 grated zucchini
1 egg
½ cup of wholemeal flour
2 tablespoons light grated parmesan cheese
2 tablespoons light ricotta
2 cloves garlic, minced
1 tablespoon coconut oil
2 tablespoons chopped basil
Serving tomato sauce

Method
Preheat the oven to 180ºC.
In a saucepan, sauté the zucchini with coconut oil and garlic.
Put the braised zucchini in a bowl.
Add the remaining ingredients (except the tomato sauce) and mix.
Shape the meatballs in the palm of your hand.
Put it them in non-stick tin and bake for 10 minutes.
Serve with hot tomato sauce.
