Raw Avocado Lime Mousse

This is a Brazilian recipe, for a great healthy summer pudding. I used to have this at my grandmother's when I was a kid, and that was waaaaay before vegan, gluten free and raw food became a thing (trust me, we're talking many many years ago when I was a child :). I guess our grandmas ate much healthier than we do nowadays... Anyway, here it is!

INGREDIENTS
2 cold avocados,  halved, pitted and peeled (they should have been in the fridge for a couple of hours)
2 tbsp fresh lime juice + zest of lime
1 tbsp of stevia (yes, my grandmother and most grandmothers in Brazil already cooked with stevia in the 80s!)


METHOD
In a blender, combine all ingredients except the lime zest.
Blend until very smooth (2 or 3 minutes) and place it in the fridge for 30 minutes
Decorate with the lime zest. Serve cold!
