HIGH PROTEIN CHICKEN GRATIN

Comfort food alert, again!! I love gratin dishes, it's like a main and a side dish all in one. And if they are yummy and healthy, oh that's my kind of dish!
​The following recipe yields four servings, with 192 calories each.

Ingredients
300 g chicken breast
1 bay leaf
2 carrots
2 celery stalks (only the white part) chopped
2 tbsp chopped parsley
2 egg whites
1 tsp of grated Parmesan cheese
Salt and pepper to taste

Method of preparation
In a sauce pan, put the chicken and bay leaf.
Season with salt and pepper.
Put enough water to cover.
Cover and cook until tender.
Drain, reserve the broth and shred the chicken.
In the broth, boil the carrots.
When tender, remove and mix the chicken in a bowl.
Add the celery and parsley.
Add salt and pepper.
Put in a glass baking tray.
Whisk the egg whites until hard.
Cover the chicken with the egg whites and sprinkle it with the Parmesan.
Bake for 15 minutes or until golden brown.
Serve immediately.
